I'm not a fan of pineapple, but that definitely looks good!
I've been meaning to try that. How was the texture of the tenderloin?
You could always sear the tenderloin on the stove beforehand as well. Then wraps the chunks in bacon before putting them in the pineapple.....damn, now I need to try this!
