I'm not a fan of pineapple, but that definitely looks good!

I've been meaning to try that.  How was the texture of the tenderloin?

Forget cakes and drink garnishes. This is what all pineapples aspire to be.

Thanks guys is was pretty good! Jeff that was one thing I would change (the texture) I will do it a little differently next time. The meat was very tender, but almost too tender, and it didn't take in as much pineapple or bacon as I expected. A longer marinade in more of a Hawaiian sauce, and maybe a quick grill of the meat for texture prior?? Chicken might do very well with this technique. I'm my worst critic, but it was very good, pinapple and bacon were perfect.

You could always sear the tenderloin on the stove beforehand as well.  Then wraps the chunks in bacon before putting them in the pineapple.....damn, now I need to try this!
